Enchilada

An Enchilada is a traditional Mexican dish. Enchilada comes from the verb enchilar (="to add chile pepper to"). Enchilada literally means "seasoned with chile pepper".

Traditionally it is made with a tortilla filled with chicken, cheese or meat, although more recently it can be also filled with vegetables or anything that is the fancy of the cook in turn. This preparation is later covered with any of tomato sauce, green tomato sauce or mole. Enchiladas are usually baked, but are sometimes fried.

Optionally, it can be covered with sour cream, grated cheese and/or finely chopped onion.
